Chimichurri Sauce

This magic elixir (as @nocrumbsleft would say) is the ingredient that takes this meal from a lovely meal to an extraordinary dinner party worthy meal. Serve with flank steak or chicken, Spanish rice and black beans.


INGREDIENTS


1 cup fresh Italian parsley stems and leaves

1/2 cup fresh cilantro stems and leaves

1/2 cup olive oil

1/4 cup red wine vinegar

4 garlic cloves, peeled

3/4 teaspoon dried crushed red pepper

1/2 teaspoon ground cumin

1/2 teaspoon salt


PREPARATION


Puree all ingredients in food processor. Transfer to plastic container. Best if made at least 2 hours ahead of time and great if done a 1-3 days ahead of time. Serve on top of flank steak or chicken.
