Old Rag Pie

Wow, this recipe blew me away. It is so easy and so satisfying! I learned of it recently when watching @nigellalawson one @discoveryplus . I used to watch her years ago and I’m thrilled she h


as a few shows on again.


Old Rag Pie was intended for bakers to use up their leftover phyllo dough. It really is such a toss together dish and has so much room for flexibility. I am going to try adding nutmeg, spinach and maybe even sun-dried tomatoes in the next few times I make this.


INGREDIENTS

10 oz phyllo dough

8 oz feta

8 oz butter

2 tablespoons Parmesan cheese (maybe more!)

2 teaspoons thyme

2/3 cup milk

2 eggs

1 tablespoon sesame seeds

1 tablespoon honey




Defrost your phyllo dough. Take 3-4 sheets and crumple them into the bottom of a baking dish or pie plate. Sprinkle the crumbled feta on top. Cover with phyllo dough. Add 2 tablespoons butter all around the top and edges. Sprinkle with thyme leaves and Parmesan. Repeat this process until you are out of ingredients. Beat the eggs in the milk. Pour milk mixture over the phyllo dough. Cover with sesame seeds and a sprinkle of Parmesan. Let the mixture sit at room temperature for 30 minutes. If you are making this for a dinner party, it can be made a day ahead and stored in the fridge. Pop it in the oven at 350 degrees when your guests arrive and bake for 30 minutes. Serve large squares drizzled with honey on top!
